My Orange and Fennel Salad is my husbands favourite fresh summertime salad! It is so easy to make, even he can do it! The benefits of oranges are well known as a source of vitamin C and their acidity enhances the crisp sweetness of the onion and the crunch of the aniseed in the fennel. The hero of the dish is the fennel, and is described as both a vegetable for the bulb, and a herb for the “yellow flowers and feathery leaves”. All of the different parts can be eaten, including fennel seeds, the bulb, the leaves and flowers making it incredibly versatile. Importantly fennel contains a rich source of dietary fiber, B vitamins and several dietary minerals, including calcium, iron, magnesium and manganese. It is a great produce that should be a staple, in everybody’s diet and fridge!

RECIPE: Orange and Fennel Salad
This recipe incorporates simple, fresh salad Ingredients and a dressing. With no cooking involved, it is great for the kids too.

INGREDIENTS
1 baby fennel bulb, trimmed, (keep the fronds for garnish)
1 x lettuce (optional)
1/2 small red onion bulb
3 medium oranges
Cracked pepper
Dead sea salt flakes or Himalayan salt, to season
Mint leaves for garnish (optional)
DRESSING
1 tablespoon apple cider vinegar
1 tablespoon orange juice
2 tablespoons olive oil
Cracked pepper
Dead sea salt flakes or Himalayan salt, to season
METHOD / GUIDE
Step 1 – Prepare the Dressing
Place vinegar, orange juice and oil in a screw-top jar
Season with salt and pepper
Secure lid. Shake to combine
Step 2 – Prepare the Ingredients
Thinly slice the fennel, and red onion
Peel oranges and slice into segments
Rough chop lettuce, into medium to large pieces
Step 3 – Combine the Salad
Place fennel, red onions, lettuce into a salad bowl
Add orange segments and dressing
Toss to combine
Garnish with fennel fronds and / or mint leaves
Serve and Enjoy!
