If you are looking for a dish that is jam packed with flavour, that really ups your vegetable content for the day, Rainbow Pickle Salad is the way to do it! It is so easy to make, even the kids can do it! Pickles provide some incredible heath benefits as they contain plenty of vitamins and minerals. They are an amazing source of probiotics which is great for your gut health. As well as supporting a healthy liver, they are well known as a wonderful source of anti-oxidants. I pickle a lot of vegetables, and I will post my pickling recipes soon, and also a more detailed post on the health benefits of pickles. But be warned, once you start eating your own pickled vegetables, you won’t want to stop!

RECIPE: Rainbow Pickle Salad

This recipe incorporates simple, fresh and pickled salad ingredients, with a delicious dressing. With no cooking involved it is great to inspire the kids too.

STARTING GUIDE
  • Cuisine: Salad

INGREDIENTS
  • 1 cup – shredded purple cabbage

  • 1/4 cup – shedding salad onion

  • 3/4 cup – a mix of saffron daikon pickles, and carrot daikon pickles

  • 1/2 cup – sliced cucumber

DRESSING – makes 1 cup
  • 60ml (1/4 cup) water

  • 60ml (1/4 cup) fish sauce

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lime juice

  • 2 tablespoons rice wine vinegar

  • 1 tablespoon finely chopped palm sugar

  • 2 long fresh red chillies, deseeded, finely chopped

  • 1 garlic clove, crushed

METHOD / GUIDE
Step 1 – Prepare the Dressing
  • Combine the water, fish sauce, lime juice, vinegar, palm sugar,chili and garlic in a jug

  • Stir until the sugar dissolves

Step 2 – Combine the Salad
  • Put all ingredients in a bowl

  • Toss to combine

  • When ready to serve on your favourite plate – add the dressing.

  • Enjoy!
