Tomatoes are commonly viewed as vegetables. They are in fact, a beautiful and healthy fruit that comes in an amazing array of colours. The variety of sizes and vibrant colours makes them perfect for making delicious meals look great too! The tomato is a member of the nightshade family which includes eggplant, capsicums and peppers. Whether they are the small red, orange, yellow cherry tomatoes, or the larger red round and roma styles, the combination of sweet, sour and acidic is delicious.

RECIPE: So simple sliced Tomato and Feta Salad
This recipe is probably the simplest salad you can make. Within 5 mins, you could be eating before the next song plays! Also with no cooking involved, it is great for the kids too.
Prep Time: 5 mins

Total Time: 5 mins
4 large organic tomatoes, sliced
1/2 small red onion bulb, sliced (optional)
8 large basil leaves, chopped
3 tablespoons balsamic vinegar
1 table spoon olive oil
1/3 cup feta cheese
METHOD / GUIDE
Step 1 – Prepare the Salad
Place the sliced tomatoes on a platter or plate.
Layer with sliced red onions (optional)
Drizzle tomatoes with balsamic vinegar
Sprinkle the chopped basil over the tomatoes
Crumble feta cheese over tomato salad
Drizzle olive oil, then season with salt and pepper, to taste
